Instructions
Step 1:
Grate zucchini and squeeze out as much moisture as possible using a clean towel.
Step 2:
In a bowl, combine zucchini, eggs, Parmesan, flour, garlic powder, salt, pepper, and parsley (if using).
Step 3:
Add a thin layer of olive oil to a skillet over medium heat.
Step 4:
Drop spoonfuls of batter into hot oil. Flatten slightly and cook 2–3 minutes per side until golden and crisp.
Step 5:
Transfer to a paper towel-lined plate. Sprinkle with extra Parmesan and garnish with herbs.
Notes
Great for meal prep or as a party snack! Try with sour cream or Greek yogurt for dipping.
