Instructions
Step 1:
Boil rotini pasta according to package directions. Drain and rinse under cold water to stop cooking and cool down quickly.
Step 2:
In a large mixing bowl, combine cooled pasta, cherry tomatoes, diced zucchini, olives, red onion, crumbled feta, and parsley.
Step 3:
Pour in Italian dressing. Toss well until all ingredients are evenly coated. Season with salt and pepper to taste.
Step 4:
Cover and refrigerate for at least 30 minutes to let the flavors meld.
Step 5:
Before serving, give the salad a final toss and enjoy chilled!
Notes
Optional add-ins: diced cucumber, roasted red peppers, or grilled chicken for a heartier version.
