4fresh or frozen wafflestoasted or pressed until crisp
1cupshredded cheddar cheese
1.5cupssliced smoked brisket
2tbspbourbon
2tbspmaple syrup
1tspbrown sugar
butter or oilfor grilling
extra maple syrupfor drizzling
Instructions
Step 1: In a small saucepan over medium heat, combine bourbon, maple syrup, and brown sugar. Simmer until slightly thickened. Toss sliced brisket in the glaze and warm through.
Step 2: Assemble sandwiches by layering cheddar cheese, bourbon-maple brisket, and more cheese between two toasted waffles. Repeat for second sandwich.
Step 3: Lightly butter the outside of waffles. Grill sandwiches in a skillet or panini press over medium heat until golden and cheese is melted, about 3–4 minutes per side.
Step 4: Slice sandwiches in half or quarters. Drizzle with warm maple syrup and serve immediately.
Notes
Try using sharp white cheddar or smoked gouda for an extra punch. Works great with leftover BBQ brisket!
