Thai Coconut Chicken Skewers

Juicy, caramelized chicken grilled to perfection with a coconut milk marinade that’s sticky, sweet, and slightly smoky. These skewers are packed with Thai-inspired flavor and perfect for cookouts or quick weeknight dinners!

Ingredients
  

  • 1 1/2 lbs chicken thighs or breast cut into chunks
  • 8 wooden skewers soaked in water
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp fish sauce
  • 2 tsp curry powder
  • 1 tsp grated ginger
  • 2 cloves garlic minced
  • 1 lime juiced
  • 1/2 tsp chili flakes optional, for heat

Instructions
 

  • Step 1: In a bowl, whisk together all marinade ingredients. Reserve 1/4 cup separately for basting later.
  • Step 2: Add chicken chunks to the remaining marinade. Cover and refrigerate for at least 2 hours or overnight.
  • Step 3: Thread the marinated chicken onto soaked wooden skewers.
  • Step 4: Grill the skewers over medium-high heat for 10–12 minutes, turning occasionally and basting with reserved marinade, until nicely charred and fully cooked.
  • Step 5: Let rest for a few minutes. Serve with lime wedges or sweet chili sauce.

Notes

For extra flavor, try adding lemongrass or a splash of coconut aminos. These also work great broiled if grilling isn't an option.
