Juicy, caramelized chicken grilled to perfection with a coconut milk marinade that’s sticky, sweet, and slightly smoky. These skewers are packed with Thai-inspired flavor and perfect for cookouts or quick weeknight dinners!
Step 1: In a bowl, whisk together all marinade ingredients. Reserve 1/4 cup separately for basting later.
Step 2: Add chicken chunks to the remaining marinade. Cover and refrigerate for at least 2 hours or overnight.
Step 3: Thread the marinated chicken onto soaked wooden skewers.
Step 4: Grill the skewers over medium-high heat for 10–12 minutes, turning occasionally and basting with reserved marinade, until nicely charred and fully cooked.
Step 5: Let rest for a few minutes. Serve with lime wedges or sweet chili sauce.
Notes
For extra flavor, try adding lemongrass or a splash of coconut aminos. These also work great broiled if grilling isn't an option.
