Equipment

  • Oven
  • Skillet
  • Baking Pan
  • Foil

Ingredients

  • 6 bratwurst sausages
  • 2 large yellow onions sliced
  • 2 apples Honeycrisp or Gala, thinly sliced
  • 1 bottle beer 12 oz, lager or ale preferred
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp brown sugar
  • salt & black pepper to taste
  • whole grain mustard or crusty rolls optional, for serving

Instructions

  • Step 1: Preheat oven to 400°F (200°C). Line a baking pan with foil for easy cleanup.
  • Step 2: In a skillet, melt butter with olive oil over medium heat. Add sliced onions and cook for 5–7 minutes until softened. Stir in brown sugar and apples; cook for 3 more minutes.
  • Step 3: Spread the onion-apple mixture in the foil-lined baking pan. Nestle the bratwursts on top.
  • Step 4: Pour the beer evenly into the pan. Cover tightly with foil and bake for 25 minutes.
  • Step 5: Remove foil and bake for another 20 minutes, flipping brats once, until browned and beer is mostly reduced.
  • Step 6: Serve hot with mustard or crusty rolls if desired.

Notes

For extra depth, try using a dark ale or adding a sprig of thyme while baking. Leftovers make great sandwiches the next day.
