Instructions
Step 1:
Heat oven to 400°F (200°C) and line a baking sheet with parchment.
Step 2:
Place fillets on parchment, drizzle with olive oil, and season with salt, pepper, and garlic.
Step 3:
Top with spinach, red onion, sun-dried tomatoes, and crumbled feta. Sprinkle dried oregano over the top.
Step 4:
Roast for 15–18 minutes or until salmon is cooked through and flaky.
Step 5:
Sprinkle with fresh herbs and serve warm!
