Instructions
Step 1:
In a large pot or Dutch oven, brown ground beef with onion and garlic over medium heat until no longer pink. Drain excess fat.
Step 2:
Stir in diced tomatoes, beef broth, potatoes, paprika, cumin, salt, and pepper. Bring to a boil.
Step 3:
Reduce heat, cover, and simmer for 25–30 minutes until potatoes are fork-tender.
Step 4:
Add corn, peas, and green beans. Simmer for another 10 minutes until vegetables are heated through and flavors combine.
Step 5:
Serve hot in bowls. Optional: Add sliced corn on the cob for extra rustic flair. Enjoy with cornbread or biscuits!
Notes
Customize with kidney beans, bell peppers, or leftover veggies. Store leftovers in the fridge up to 4 days or freeze for later.
