Instructions
Step 1:
In a bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and garlic powder until smooth to make the Bang Bang sauce.
Step 2:
In another bowl, toss chicken chunks with olive oil, salt, pepper, and 2 tablespoons of the prepared sauce. Let marinate for 15–30 minutes.
Step 3:
Thread chicken onto skewers. Grill on medium-high heat for 10–12 minutes, turning often, until lightly charred and fully cooked.
Step 4:
Brush chicken with additional Bang Bang sauce during the final 2–3 minutes of grilling for a glossy glaze.
Step 5:
Remove from grill, garnish with parsley or cilantro, and serve with extra Bang Bang sauce on the side.
Notes
Soak bamboo skewers in water for 30 minutes to prevent burning. Adjust the sriracha amount to control the heat level.
