For the Meatloaf

For the Creamy Parmesan Sauce

butter

flour

shredded Parmesan

Instructions
Step 1:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
Step 2:
In a mixing bowl, combine all meatloaf ingredients. Mix just until combined. Shape mixture into a loaf on the prepared baking sheet.
Step 3:
Bake for 45–50 minutes, or until golden and internal temperature reaches 165°F (74°C).
Step 4:
While the meatloaf bakes, make the sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
Step 5:
Slowly whisk in milk. Simmer until thickened, then stir in Parmesan. Season with salt and pepper to taste.
Step 6:
Slice meatloaf, spoon warm sauce over each serving, and garnish with extra parsley.
Notes
Use ground turkey as an alternative to chicken. For a spicy kick, add crushed red pepper to the sauce. Leftovers make great sandwiches!
