Ingredients
  

  • 1 cup whole milk ricotta
  • 2 medium ripe tomatoes finely diced
  • 2 tbsp extra virgin olive oil plus more for drizzle
  • 2 tbsp grated parmesan cheese
  • 1 clove garlic minced
  • 1 tbsp chopped fresh basil plus whole leaves for garnish
  • salt & black pepper to taste
  • red pepper flakes optional pinch
  • crostini or crackers for serving

Instructions
 

  • Step 1: In a bowl, mix diced tomatoes, olive oil, garlic, parmesan, chopped basil, salt, pepper, and red pepper flakes (if using). Let marinate 10–15 minutes.
  • Step 2: Spread ricotta in a shallow serving bowl. Season lightly with salt and pepper.
  • Step 3: Spoon the marinated tomato mixture over ricotta. Drizzle with more olive oil and garnish with fresh basil.
  • Step 4: Pair with crostini, pita chips, or fresh bread.

Notes

Chill ricotta for extra firmness. You can also blend ricotta for a smoother base if preferred.
