finely diced

extra virgin olive oil
plus more for drizzle

grated parmesan cheese

red pepper flakes

Instructions
Step 1:
In a bowl, mix diced tomatoes, olive oil, garlic, parmesan, chopped basil, salt, pepper, and red pepper flakes (if using). Let marinate 10–15 minutes.
Step 2:
Spread ricotta in a shallow serving bowl. Season lightly with salt and pepper.
Step 3:
Spoon the marinated tomato mixture over ricotta. Drizzle with more olive oil and garnish with fresh basil.
Step 4:
Pair with crostini, pita chips, or fresh bread.
Notes
Chill ricotta for extra firmness. You can also blend ricotta for a smoother base if preferred.
