Ingredients
  

  • 2 boneless chicken breasts cubed or sliced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • salt & pepper to taste
  • 2 cups cooked jasmine or basmati rice
  • 1/2 cup cherry tomatoes
  • 1/4 red onion sliced
  • fresh parsley & lemon wedge for garnish
  • 1/2 cup Greek yogurt
  • 1/2 cucumber finely grated
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill

Instructions
 

  • Step 1: Preheat oven to 400°F (200°C). Toss cubed chicken with olive oil, oregano, salt, and pepper. Spread in a casserole dish with cherry tomatoes. Bake for 20–25 minutes.
  • Step 2: While the chicken bakes, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper in a bowl. Chill until ready to use.
  • Step 3: To assemble, divide cooked rice between bowls. Top with baked chicken and tomatoes. Spoon tzatziki sauce on top and add sliced red onions, fresh parsley, and a lemon wedge.
  • Step 4: Serve warm and enjoy a bright, Mediterranean-inspired meal.

Notes

Make it a meal-prep favorite by storing components separately and assembling just before serving. Add olives or feta for extra flair!
