Instructions
Step 1:
Heat olive oil in a large skillet over medium-high heat. Season and sear chicken until golden and cooked through. Remove and set aside.
Step 2:
In the same skillet, add garlic and sun-dried tomatoes. Sauté until fragrant, about 1 minute.
Step 3:
Add chicken broth and cream. Stir in uncooked penne pasta. Simmer uncovered for 12–15 minutes, stirring occasionally until pasta is tender.
Step 4:
Stir in parmesan and baby spinach until cheese is melted and spinach is wilted.
Step 5:
Return chicken to the skillet, simmer 2 more minutes. Serve hot topped with cracked black pepper.
Notes
For extra depth of flavor, try adding a splash of white wine with the broth or a pinch of red pepper flakes for heat.
