Ingredients

breadcrumbs

grated Parmesan

garlic powder

olive oil

red bell pepper
sliced

yellow bell pepper
sliced

garlic

heavy cream

beef broth

Dijon mustard
chopped parsley
for garnish
Instructions
Step 1:
In a bowl, mix all meatball ingredients. Form into small balls.
Step 2:
Heat olive oil in a large skillet. Sear meatballs on all sides until browned (they’ll finish cooking in the sauce). Remove and set aside.
Step 3:
In the same skillet, cook peppers for 4–5 minutes. Add garlic and sauté briefly.
Step 4:
Stir in cream, broth, mustard, salt, and pepper. Bring to a simmer.
Step 5:
Return meatballs to skillet. Simmer for 10 minutes until cooked through and sauce is thickened.
Step 6:
Garnish with parsley and serve hot with rice, pasta, or crusty bread.
Notes
These meatballs are excellent for meal prep. Store leftovers in the fridge for up to 3 days. Reheat gently over the stove.
