Ingredients
  

  • 1 package cheese ravioli 9 oz
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 1 cup sliced mushrooms
  • 1/2 cup sun-dried tomatoes chopped
  • 3 cups fresh spinach
  • 1/4 cup pasta water or broth
  • salt and pepper to taste
  • crushed red pepper flakes optional
  • fresh parsley for garnish

Instructions
 

  • Step 1: Cook ravioli according to package instructions. Reserve 1/4 cup of pasta water and drain.
  • Step 2: In a skillet, heat olive oil and butter over medium heat. Add garlic and mushrooms and sauté until golden brown.
  • Step 3: Stir in sun-dried tomatoes and spinach. Cook until spinach is wilted.
  • Step 4: Add cooked ravioli and reserved pasta water. Toss to combine and coat everything evenly.
  • Step 5: Season with salt, pepper, and crushed red pepper if using. Garnish with chopped parsley and serve warm.

Notes

For extra richness, add a splash of cream or a sprinkle of Parmesan. You can also substitute kale or arugula for the spinach.
