Ingredients
  

  • 4 slices artisan bread sourdough or white, buttered
  • 1 cup cooked shredded chicken
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 tsp garlic powder
  • salt & black pepper to taste
  • 4 slices cheddar cheese 2 per sandwich
  • 4 slices tomato 2 per sandwich
  • 5 slices crispy cooked bacon 2–3 per sandwich
  • 2 tbsp chopped green onions
  • butter for grilling

Instructions
 

  • Step 1: In a bowl, combine shredded chicken, mayo, Dijon mustard, garlic powder, green onions, salt, and pepper to make chicken salad.
  • Step 2: On one slice of buttered bread, layer a slice of cheddar cheese, tomato slices, bacon, and a generous scoop of chicken salad. Top with another slice of buttered bread.
  • Step 3: Heat a skillet over medium heat. Grill sandwich for 3–4 minutes per side until golden and cheese is melted.
  • Step 4: Slice in half and serve warm with pickles or chips.

Notes

For a spicy twist, add a few jalapeño slices or a dash of hot sauce to the chicken salad mix. Works great with rotisserie chicken too!
