Step 1: In a bowl, combine shredded chicken, mayo, Dijon mustard, garlic powder, green onions, salt, and pepper to make chicken salad.
Step 2: On one slice of buttered bread, layer a slice of cheddar cheese, tomato slices, bacon, and a generous scoop of chicken salad. Top with another slice of buttered bread.
Step 3: Heat a skillet over medium heat. Grill sandwich for 3–4 minutes per side until golden and cheese is melted.
Step 4: Slice in half and serve warm with pickles or chips.
Notes
For a spicy twist, add a few jalapeño slices or a dash of hot sauce to the chicken salad mix. Works great with rotisserie chicken too!
