Ingredients
  

  • For the Chicken
  • 1 lb boneless chicken thighs or breasts
  • salt & pepper to taste
  • 1 tbsp cornstarch optional, for crispiness
  • 1 tbsp oil for pan-frying
  • For the Bang Bang Sauce
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey or sugar
  • 1 tsp rice vinegar
  • For the Fried Rice
  • 3 cups cold cooked rice
  • 2 eggs beaten
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 green onions sliced (optional)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp oil for cooking

Instructions
 

  • Step 1: Season chicken with salt and pepper. Toss lightly with cornstarch if desired. Sear in hot oil until golden and cooked through. Brush with Bang Bang sauce and set aside.
  • Step 2: In the same skillet, scramble eggs until just set. Remove and set aside.
  • Step 3: Add peas and carrots to skillet. Sauté for 2–3 minutes until tender.
  • Step 4: Stir in cold cooked rice, soy sauce, and sesame oil. Stir-fry 3–4 minutes until heated through. Fold in eggs and sautéed veggies.
  • Step 5: Slice chicken and layer over the rice. Drizzle with extra Bang Bang sauce and garnish with green onions if using. Serve hot!

Notes

For best texture, use day-old rice. Add red pepper flakes for extra heat or swap chicken for shrimp or tofu if desired.
