Ingredients
  

  • 1 ripe avocado diced
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels fresh, frozen, or canned
  • 1/2 cucumber chopped (optional)
  • 2 tbsp fresh parsley or cilantro chopped
  • 1 tbsp olive oil
  • 1 tsp lemon or lime juice
  • salt and freshly cracked black pepper to taste

Instructions
 

  • Step 1: Cut avocado, tomatoes, and cucumber (if using). Drain corn if canned.
  • Step 2: In a bowl, combine all ingredients gently to avoid mashing the avocado.
  • Step 3: Drizzle with olive oil and lemon juice. Season with salt and pepper.
  • Step 4: Chill or serve immediately for best flavor and texture.

Notes

Best enjoyed fresh. Add diced red onion or feta for extra flair!
